SPONGY PLAIN CAKE

Ingredients:
Maida flour - 1 cup +1 tbsp
Baking powder half tsp
Baking soda 1/8 tsp 
Salt 1/4 tsp

Egg - 3 nos. 
Vinegar - half tsp
Powdered sugar  - half cup
Oil 3 - tbsp
Milk - 3to 4 tbsp
 

Method:
1. Grease a 7 inch pan with oil and place the butterpaper on it. Grease again with oil and keep aside.
2. Sift all dry ingredients together twice and keep aside
3. In a wide bowl add the egg whites alone and beat well till fluffy.
4. Add powdered sugar gradually and beat well till frothy. 
5. Now add half tsp vinegar and the egg yolks and beat well for few minutes till they become frothy.
6. Now add the dry ingredients, oil and milk together in three batches and mix well using cut and fold method using a spatula.
7. Preheat the oven at 180℃ for 10 minutes
8. Pour the batter in the pan  and bake it in oven at 180℃ for 25 minutes.
9. Remove the pan from oven and cover it with a cotton cloth and allow to cool for half an hour.
10. Demould the cake cut as desired and store it in airtight container .
